Peach, Yogurt & Pistachio Treats

It may not officially be summer as far as the calendar goes, but around here our summer favorite recipes are in full force. One of our very favorites, that is served over and over all summer, is this Peach, Yogurt & Pistachio Treats recipe. Fresh, sweet with a nice bite from the yogurt and crunchiness from the protein packed pistachio’s, this treat will satisfy your taste buds and give your body some healthy nourishment for those long, fun, summer days. The combination of flavors is pure perfection, and it is so easy to make. A no fuss recipe, where no cooking is required and can be ready in 5 minutes flat. I also love that you can serve it for breakfast, a snack or even dessert. It’s a family favorite for its taste, but for me, I know I’m giving my family something healthy and I don’t have to spend a lot of time in the kitchen. That’s a win, win!!!

You’ll only need 4 ingredients for this recipe: Peaches (or nectarines), plain 0% Greek yogurt, shelled Pistachios and Agave Nectar (or honey).

I prefer to use as many organic ingredients as possible. I usually use nectarines as that’s my family’s favorite, I buy them at Trader Joe’s or Costco in bulk because we love them so much.

I purchase the Pistachios, shelled at Trader Joe’s. These are dry roasted and salted but you can also use raw.

I also like the Fage Greek yogurt but you can substitute this with a vegan brand too.

I buy this organic Agave Nectar at Costco. We always have this on hand for smoothies and Acai bowls.

This treat is so easy to assemble:

half the nectarine/peach and take out the pit,

place a small scoop of yogurt in the center of each nectarine/peach,

sprinkle with pistachio nuts,

drizzle with Agave Nectar/honey,

and serve.

I served these for breakfast this morning and it was so easy and everyone loved them. I haven’t made them since last summer so it was a nice surprise for my family.

Peach, Yogurt & Pistachio Treats

Ingredients:

  • Peaches or Nectarines
  • 0% Plain Greek Yogurt
  • shelled Pistachio nuts
  • Agave Nectar or Honey

Directions:

Half the nectarine/peach and take out the pit. Place a small scoop of yogurt in the center of each nectarine/peach. Sprinkle with pistachio nuts. Drizzle with Agave Nectar/honey. Serve.

Summer is our favorite time of year. It’s like our whole family feels rejuvenated. One of the reasons we love it so much is for all the healthy and fresh food that we can eat outdoors while enjoying the fresh air and sunshine. Look for lots more summer recipes to come.
