Delicious Homemade Caprese Pesto Sandwiches

We are a bit obsessed with anything Caprese around here; salads, sandwiches, appetizers, you name it, if it has tomatoes, mozzarella, and basil, we’re in! We really love Caprese sandwiches and recently had one with pesto on it too. The family loved it, so I decided to give it a try at home. Everyone enjoyed them and the leftover sandwiches kept nicely in the refrigerator and were gobbled up later. They were super easy to make and so fresh, my two favorite things when cooking. Here’s what you do…

Simple ingredients: Kraft Zesty Italian dressing (or your favorite) Trader Joe’s Basil Pesto (or your favorite), fresh Basil, Mozzarella cheese, beefsteak tomatoes, butter and bread (I used Trader Joe’s Panini Rustic Rolls).

Trader Joe’s Panini Rustic Rolls are small in size and come in a pack of 6. Great size for kids, most adults will probably eat 2. They are also half-baked so they keep for a few days before using them and then they are nice and warm out of the oven when you serve them. YUM!

These two items are a must for my pantry. The Trader Joe’s Basil Pesto is wonderful and is great on sandwiches and pasta. For an easy dinner cook up some pasta, add the pesto, a little butter; sprinkle with pine nuts and some Parmesan cheese and you’re good to go. Kraft Zesty Italian dressing I use all the time, to marinate veggies, chicken, and on sandwiches. I know fresh is best, but this is a wonderful alternative and I was happy to see that Katie Lee admitted on her cooking show The Kitchen, that she also uses this. First step is to bake the bread, while this is baking I slice the Mozzarella cheese, slice the tomatoes, and wash the basil leaves. We love basil so much but fresh basil always goes bad so quickly; this time I bought a basil plant from Trader Joe’s and it’s lasting so long and looks and smells lovely in my kitchen. I’ll be doing this from now on, in fact it’s inspired me to keep more herb plants in my kitchen in the future.

When the bread is done, I slice it and butter both sides. On one side I spread a generous amount of the pesto.

Next I add the Mozzarella and tomatoes. Look at those juicy, fresh tomatoes!

Drizzle the tomato and other piece of buttered bread with the Italian dressing.

Top tomatoes with a couple pieces of fresh basil.

Put the top piece on the sandwich and there you have it: a delicious Caprese Pesto Sandwich.

Look at the colorful layers of goodness. The fresh ingredients along with the flavorful soaked bread. Lunch never tasted so good!
