If you are going to take away anything from this blog, let it be this recipe. Trader Joe’s Poor Man’s Caviar is so delicious, bursting with flavor, with amazing texture, it’s like a little party in your mouth. The light heartiness of the Lentils, mixed with the flavorful Bruschetta Sauce and slight punch of Feta, topped on a lightly toasted French Baguette is the perfect combination of heavenly flavors that will make your taste buds dance with delight . It makes a perfect appetizer for any party, a lovely light meal served with a simple green salad, and even makes a great after school snack for kids. I’m always looking for meatless protein packed meals and the lentils are just right for that. Besides this being so delectable it is incredible easy to make, easy to take along to another location, and can be made in advance. My family has been enjoying this for years and it is ALWAYS a hit! POOR MAN’S CAVIAR (A TRADER JOE’S RECIPE)
4 Simple ingredients is all you need for this. All ingredients can be found at Trader Joe’s but you can definitely substitute with other brands. Make sure and get 2 loaves of baguettes as this recipe makes plenty.
You can refrigerate mixture and serve when ready or serve immediately. This can definitely be made a head of time or even the day before. Super nice to take along to a party, transports really easy, just put together when you get there. The Lentil mixture is also good on it’s own, my niece just eats it by the spoonful.

Poor Man’s Caviar (a Trader Joe’s recipe)
Ingredients: (all my ingredients purchased at Trader Joe’s)
- 1 lb Steamed Lentils (ready to eat)
- 14.5 oz Bruschetta Sauce
- 8 0z. Feta Cheese (block style)
- 2 French Baguettes
Pre-heat oven to 350 degrees. In a large bowl crumble Feta Cheese into small pieces. Pour in Bruschetta Sauce and mix well with a large spoon. Let stand 25 minutes. While you are waiting, cut baguettes diagonally into approximately 1 inch pieces. Place on a baking sheet and cook on middle rack for 7 minutes on both sides (just depends on how crispy you want the bread, it is fine to cook it only on 1 side for 7 minutes). After 25 minutes, crumble Lentils into bowl and mix well. You are now ready to top each piece of baguette with a generous amount of Lentil mixture and serve.
