Vanilla Poppy Seed Cake is a delicious, light, not too sweet, dessert or morning cake. The vanilla flavor rather than the usual lemon flavored cake, makes it something special. Dust it with a light sprinkle of powdered sugar and it looks like it’s been snowed on. We like to sprinkle it on each piece individually, but you can sprinkle over the top of the cake before serving also. This is so easy, everything is mixed in one bowl and you can make this ahead of time which makes it great for the holidays. Enjoy…

photo copy 3Put all the ingredients in a large mixing bowl

photo copy 4Beat all ingredients together for 2-3 minutes or until well mixed. A hand mixer is fine.

photo copy 5Pour into generously greased and floured bundt pan. I use baking spray to do this. Bake for 40-50 minutes. Mine is usually done in 40 minutes and comes out nice and moist.

photo copy 6The finished cake will rise very high but will settle as it’s cooling. After 10 minutes in the pan I invert onto a cooling rack. When ready to serve drizzle with powdered sugar (I like using a hand sifter to give it a nice sprinkling) and EAT!

Vanilla Poppy Seed Cake Recipe

Ingredients:

  • 1 package Butter Cake mix
  • 4 eggs
  • 1/2 cup oil
  • 1 cup water
  • 1 large package instant vanilla pudding mix
  • 1/4 cup poppy seeds
  • powdered sugar
  • baking oil with flour for bundt pan

Directions:

Preheat oven to 350 degrees. Beat all ingredients together for 2-3 minutes or until well mixed. Pour into generously greased and floured bundt pan. Bake for 45-50 minutes (I usually only cook it for 40 minutes). Cake will rise very high but will settle when cool. Drizzle with powdered sugar.
